The 1992 Domaine de Chevalier Blanc is poured from a splendid magnum and delivers everything you want. Wonderful delineation on the nose, this unfurls with seductive scents of orange blossom and lemon thyme, somehow quite "gentle" yet focused. The palate is medium-bodied with a dab of lemon sherbet on the entry, slightly waxy in texture with a fine bead of acidity emanating from this cool off-vintage. A wonderful twist of sour lemon gets the saliva flowing and you want more. Excellent. Tasted twice at the 1982 Bordeaux dinner at Hatched then again at the château.

Pessac-Léognan, an esteemed Bordeaux appellation in the Graves region, is renowned for both red and white wines. The reds are elegant and complex, with earthy notes, blackcurrant, plum, tobacco, and graphite, supported by refined tannins and excellent ageing potential. The whites, primarily from Sauvignon Blanc and Sémillon, are fresh, aromatic, and balanced, with citrus, tropical fruit, and floral notes, plus a creamy texture from barrel ageing. Top producers include Château Haut-Brion, Château La Mission Haut-Brion, Château Smith Haut Lafitte, and Château Pape Clément.
